Van Nays, CA (Patricia J Ryan), Hollywood, CA (Terri L. Hall) What brought you to Glendale? We had an accounting and tax practice in Glendale for 24 years. What drew you to the kitchen? We wanted homemade, good quality and tasty food, food like we grew up with. Many of our entrees contain Certified Angus Beef. Culinary training and experience: Our General Manger has eight years of restaurant experience. I have collected cookbooks and watched cooking shows. Tools of the trade: Favorite tools are knives and favorite ingredients are New Mexico red and green chilies. Favorite food, favorite chef and why? Ryan: My favorite foods are our green corn tamales and chile rellanos. My favorite chef has been Julia Child and still is because her original TV programs made it look like anybody could learn to cook! When the chef’s hat is off (hobbies): Painting, shopping, and gardening. Unique dishes you prepare: Homemade lean beef chorizo our own battered cod. Our tacos are unique because of the way we prepare them; we use Top Sirloin Lean Beef, which we grind and bake with our secret spices. Old standbys: Chimichangas, especially shredded bay and topped with friendly made guacamole, sour cream, cheddar, tomatoes and green onions. Advice for new chefs or restaurant owners: Use fresh, quality food at all times. How many cooks in your kitchen? There are five cooks in our kitchen, and they are all trained and they work together as a team. Chocolate or Vanilla? Chocolate How do you take your coffee?
